I left the skin on the sweet potatoes because they were organic. I thinly sliced up two good size but not overly large sweet potatoes. I put them in a bowl of water with 1/4 cup white vinegar to 2 cups water. Soaked for 20 minutes.
Then I loaded the racks on my dehydrator and they were full. I put the machine on for 24 hours. To dehydrate in the oven bake at 250 for about 4-5 hours depending on thick whatever you are dehydrating is.
They are tasty. And best of all Chester CHEWS, even though these are as thin as potato chips.
